Chef's speciality: Local, quality produce.

Nicolas and Marjorie Ferré have set up shop in the Manoir de la Mortière, a building of great historical and architectural interest.
Traditional cuisine.
Organic snails from the Vendée, fish from the Les Sables fish auction, vegetables from the Ferme de Beauregard (Olonne sur Mer), where Nicolas farms.

9€/Marans egg, cocotte/mouillette, smoked vegetables/iodée-spinach.
18€/farmhouse pork belly from Vendée, confit on the bone, devil's style ketchup.
18€/fish from the Sables d'Olonne fish auction "à la voix" according to the day's catch, colourful vegetables from our gardens in Tandoori, yoghurt and coriander.
9€/hot soufflé with Grand-Marnier and organic orange from La Brunetière.
